Deliciously deadly chocolate brownie

I was introduced to this recipe by a club O2 member when we were away for the weekend doing an AROC Adventure Race. Everyone loved it so much that we convinced her to make it for us again the next night. The brownies are very rich but very tasty, oh and did I mention very bad for you! However, we are all allowed a little indulgence every now and then right!?

The finished brownie

The brownies are great warm or cold and you can serve them with icecream if you have a real sweet tooth!

Ingredients:

– 250 grams butter
– 1 1/2 cups sugar
– 4 tbs flour (I used Orgran gluten free all purpose plain flour)
– 1/2 tsp baking powder
– 3/4 cup cocoa
– 1 block chocolate (you can use just about anything – I used dark)
– 4 eggs

Method:

1. Combine butter and sugar in a sauce pan until the butter is melted and sugar is disolved.
2. In a bowl combine cocoa, flour and baking powder
3. Add butter and sugar mixture to dry mixture and mix through
4. Whisk in the eggs
5. Chop the block of chocolate into small pieces (each piece into approx quarters) and quickly mix into mixture (to ensure the chocolate doesn’t completely melt)
6. Put the mixture into a rectangle shaped tin and bake at 180 degrees for 25-30 minutes
7. Wait for the brownie to harden a little
